Smoked Lemon Garlic Chicken Breasts

This has been my go-to chicken prep for the week.
So good and it holds really well in the fridge for a couple days.


Ingredients

• 2 to 3 chicken breasts
• 3 tbsp melted butter, tallow, or ghee
• 3 to 4 cloves garlic, minced
• Zest of 1 lemon
• Juice of ½ lemon
• Sea salt
• Optional: fresh thyme or rosemary


Instructions

  1. Prep
    Pat chicken breasts dry and place in a shallow dish.

  2. Season
    Mix melted butter, tallow, or ghee with garlic, lemon zest, lemon juice, and sea salt.
    Coat chicken evenly on both sides.

  3. Smoke
    Preheat smoker to 425°F.
    Smoke for 20 to 25 minutes, until internal temperature reaches 165°F.

  4. Rest
    Remove from smoker and let rest for 5 minutes before slicing.


How I Eat It

I love this cold the next day with a Graza olive oil drizzle and flaky sea salt.
